Ingredients
- 4 chicken thighs, boneless and skinless
- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1½ cups orzo
- 3 cups chicken stock
- 1 lemon, zest and juice
- 2 large handfuls of spinach
- Salt, pepper and a pinch of dried oregano
Method
- Season the chicken with salt, pepper and oregano. Brown in the oil in a wide pan for 4 to 5 minutes per side, then set aside.
- Soften the onion in the same pan for 5 minutes, then add the garlic for 1 minute.
- Stir in the orzo, stock and lemon zest. Return the chicken to the pan, cover and simmer for 12 to 15 minutes until the orzo is tender and the chicken is cooked through.
- Stir in the spinach until wilted and finish with the lemon juice.
Why it works
A complete meal in one pan: lean protein, carbohydrate and vegetables, with very little washing up. That is the kind of meal that actually gets cooked on a weeknight.
